Twink's Treats: Winter Twinkle Salad
The definition of “gathering” is “an assembly or meeting, especially a social or festive
one or one held for a specific purpose”. We’re going to focus on the “social or festive one”. I love these type of gatherings so much – in fact, they keep me going! I have found that having groups of framily and friends coming together in your home is the ultimate soul saver, and helps keep these relationships thriving. There’s such a camaraderie having people in your home, sharing your hospitality and having the opportunity to give a piece of yourself to your guests. I grew up in a family that entertained – my father was famous for frequently bringing customers’ home for dinner, and my parents were avid bridge players who hosted many, many couples bridge games and dinner parties on the weekends. So, it was natural that I segued into that role. But – and a large BUT – there is no wrong and right way to have the “gathering”. It has to be what is comfortable for you. So many I know are intimidated by having people over. The gathering can be anything, any theme, for any reason, relative to the season or just the opposite. The important thing to remember is to be comfortable with yourself as the host/hostess – no matter how casual or how formal. The only stipulation I have is wine is always served!!
One of my favorite quotes hangs in my kitchen from Cesar Chavez. It reads “If you want to make a friend, go to his house and eat with him – the people who give you their food, give you their heart”. I firmly believe this- those that know me believe it too. It’s one way I can give to those I love and care about that money can’t touch. We’ll explore gatherings together in weeks to come. But for today – one recipe that has proven to be a favorite with my friends at my gatherings is the “Twinkle Salad”.
This is the Winter Version: Winter Twinkle Salad (serves six) Mixed Salad Greens –
I use a mixture of chopped romaine hearts, baby spinach, and baby romaine leaves
1 cup celery, chopped
1 cup carrots, chopped
1 large can mandarin oranges, drained
1 medium pear, peeled and chopped
1 medium apple, peeled and chopped
Slivered, toasted almonds or toasted pumpkin seeds
Apple Cider Vinaigrette Dressing:
1/4 cup apple cider vinegar
1/4 cup white wine vinegar
1 tablespoon Dijon mustard
2 tablespoons honey
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup canola or olive oil
Whisk all ingredients together until smooth.
Place greens on salad plates or bowls. Top with celery, carrots, oranges, apples, and pears. Drizzle with dressing, top with feta and almonds or pumpkin seeds.
