Twink's Treats: All for the Love of FRAMS
Let’s talk about gatherings, my favorite activity! A few blog posts ago, I shared my passion for entertaining my family and friends – but I prefer to call it a gathering! Sounds less formal and more inviting. Last night, I had a little gathering for my FRAMS. The FRAMS (Friends and Family) is the official name for our book club. The FRAMS are my dear friends – two are actually family members of mine (beloved niece and sister-in-law), but they are all my wonderful friends. We keep each other going through good times and stressful times, through thick and thin, - that’s us. We actually do read a book each time, and have some lively discussion! It’s really ironic that no matter what the book is about, we segue into the relating threads of our lives. I like to host these gatherings, as it’s a way I can give them all a piece of my heart because they give me so much more- unconditional love and friendship. The menus vary by hostess and month and whatever I dream up when it’s my turn, but the only real rule we have is that we must serve wine! Happy to say that none of us are rule-breakers…..
My menu last night consisted of a chicken breast stuffed with spinach, feta and parmesan cheese in a white wine beurre blanc sauce, orange and white potatoes, balsamic green beans, and a kale salad. I’ll get into some of these recipes later, but today we’re going to feature the dessert. I made a chocolate Nutella mousse that was divine. Classic chocolate mousse is made with egg yolks, chocolate, heavy cream, etc., and I’ve done those a million times, but I have a shortcut recipe for a weeknight gathering. Here’s my version:
Thursday Night Nutella Mousse ala Twink
About 6 ounces of softened cream cheese (I use Philadelphia Neufchatel 1/3 less fat)
1 carton heavy whipping cream, whipped until stiff
1 1/2 cups Nutella Hazelnut spread
½ t. vanilla extract
Chocolate fudge sauce, raspberries or strawberries for garnish
In mixer, beat cream cheese and Nutella until smooth, beat in vanilla. Gently fold in whipped cream and mix well. Spoon into stemmed champagne or martini glasses, and refrigerate. Garnish at serving time with chocolate fudge sauce (like Smuckers or Hershey’s) and berries. Goes great with a glass of red wine! Savor, eat slowly and enjoy.
