Twink's Treats: Pizza Fridays
Friday nights – is there anything better (besides Saturday night)! There is a psychological essence about Friday night. I’ve always worked outside the home, and looked so forward to Friday! Around 3:00 in the afternoon, the thought of Friday night really keeps you going to the end of the workday - knowing the entire weekend is before you, and Monday morning is miles away! It’s truly one of the most relaxing times of the week for me.
Sometimes we go out with friends, but many times, I just like to kick back and relax at home. That means not cooking an elaborate meal – open a bottle of wine, chill with my husband. But we do have to eat! I try to make something simple on Friday nights – good, but not labor intensive. So, last Friday was pizza night. No delivery pizza for us – it’s so easy to make your own, and they are so good. Just keep a few ingredients on hand and you, too, can have Friday night pizza night! Here’s my version:
Flatbread Pizzas for Two
2 Thin Flatbreads (like Flatouts)
½ jar pizza sauce (I used Ragu)
Fresh mozzarella cheese
Green/red peppers, diced
Italian sausage, browned and drained
Fresh basil, shredded
Preheat oven to 350. On pizza stone or stone baking pan (I use Pampered Chef), arrange flatbreads. Brush lightly with olive oil, and bake for about 6 minutes or until slightly crispy. Remove from oven, top each flatbread with sauce, then layer toppings. On mine, I put tomato slices, banana peppers, fresh mozzarella and parmesan, then topped with oregano and fresh basil. On Paul’s, I put Italian sausage, green and red peppers and onions, fresh mozzarella, parmesan and oregano.
Bake for approximately 10 minutes or until cheese is melted and slightly browned. Remove from oven, and cut into sections. Serve with a simple salad, red wine and enjoy!!!
