Twink's Treats: Summer Staples
In this part of the country, it’s just plain old HOT! July in all its glory. Last week, I talked about the bounty of summer – fresh vegetables. It seems all the tomatoes, cucumbers, zucchini, squash and peppers come in at once. We have to take advantage of them while we have them – they’ll be just a fond memory in the winter. So how do we use them all up? I have developed “staples” over the years, using what is fresh from my deck garden or my friends’ real garden (as well as the Farmer’s Market!). One “go to” that we never tire of is a Cucumber and Tomato Salad. Always a hit, so fresh and good, easy to prepare and goes with anything. My husband could eat this every night (and he does some weeks in the summer with the bounty!)
Here’s my version:
Twink’s Cucumber Salad – serves 4-6
2 large cucumbers or 6 small, peeled and sliced
2 medium to large tomatoes, cut into small wedges
½ Vidalia onion, thinly sliced
1 green pepper, sliced (OPTIONAL – I don’t eat them but many others do)
Fresh parsley, chopped
1 teaspoon oregano
Apple Cider Vinegar
Salt and pepper
In glass bowl, place cucumbers, tomatoes, onion and peppers if you are using them. Drizzle with olive oil and add vinegar – about a ¼ cup to ½ cup vinegar, to taste. Season with salt and pepper, add oregano and parsley and mix well. Let it stand for about 30 minutes at room temperature. This is particularly good with crusty white bread for dipping in the juice!!
Twink’s Tip – NEVER refrigerate a fresh tomato. It zaps the flavor!
